How baker's percentage works
Every ingredient is compared with total flour weight. Flour is the 100% reference, so a dough with 500 g flour and 375 g water has 75% water. The calculation is 375 divided by 500, then multiplied by 100.
Baker's percentage is different from saying what share of the final dough an ingredient makes up. In a 75% hydration dough, water is not 75% of total dough weight. It weighs 75% as much as the flour.
Formula totals can be greater than 100%. If the formula contains 100% flour, 75% water, 2% salt, and 0.6% yeast, the total is 177.6%. That is normal because all the percentages use flour as their reference.
